My eximstats (included with the FC4 exim rpm) will take the logfile 
on STDIN like so:

cat /var/log/exim/main.log.3 | eximstats

So logwatch could determine which arbitrary dates you want and then feed that 
to eximstats on a pipe.  That was the idea I had for using eximstats.
